For all of you who checked my site on Friday looking for a recipe, I apologize for my lack of follow-through. Due to forces beyond my control I was unable to post a recipe on that day. But since you are being so patient and continuing to check back, I have a wonderful recipe to share with you today. I lament it is not quick, but it is well worth the time and preparation for it is delectable.
I have to credit my sister-in-law for giving me this recipe. Once we tried it, it has become a favorite in our house. My husband said it reminds him of some of the dishes he had on his mission in Argentina. I just think it is wonderful.
Drumroll, if you please.......................................
Chicken Milano
6 chicken breasts (boneless, skinless and flattened)
1/2 c. flour
2 eggs, beaten
1 c. Italian Bread Crumbs
1/2 c. butter or margarine
1 c. marinara sauce
1 c. half and half or milk (I use milk)
1/2 c. Mozzarella cheese, shredded + 1/2 c. Swiss cheese, shredded (or you can just use 1 c. Mozzarella cheese, shredded, like me)
1/4 c. Parmesan cheese, grated
Roll each chicken in flour; dip in beaten egg. Roll in bread crumbs to coat well. Melt butter in pan. Add chicken pieces. Cook until browned on all sides. Mix marinara sauce and milk in small bowl, reserving 2 tablespoons. Pour sauce into baking dish. Arrange chicken over sauce. Mix cheeses in a small bowl. Sprinkle over chicken. Top with reserved sauce. Bake loosely covered at 350 for 30 minutes or until cooked through. Serves 6.

Argentina food "eh?" Interesting...not what I would have pictured. Sounds yummy too!
