Fast Food Friday: Beef Taco Skillet

How do you like my new look? I decided I needed a summer facelift!

This is a recipe from the Campbell's Soup Kitchen that I love. It is fast and easy, plus it has a good ole spicy Mexican flavor which I love. Prep/Cook Time: 20 minutes. SWEET!

1 lb. ground beef
1 can Campbell's Tomato Soup
1 cup salsa (they recommend Pace, but I've used everything)
1/2 cup water
8 flour or corn tortillas, cut into 1 inch pieces (I like corn)
1 cup shredded cheese

Cook beef in skillet until browned. Pour off fat. Add soup, salsa, water, tortillas and half the chesse. Heat to a boil. Cover and cook over low heat 5 minutes or until hot. Top with remaining cheese.

That's it! It says it only serves 4, but I've fed my family of 6 on it. Of course all my kids are under 12.......

I like your new look!, it says to me: "It's summer, the sun is out, my blog is summery and clean..." or something like that.
I'm way behind on my cooking, I still want to make the banana bread, the royal chicken and now this recipe. Perhaps this week I'll stay off the internet (somehow) and do some cooking.

I tried your recipe tonight. YUM The kids gobbled it up, of course that could be because I told them when we sat down that this from Aunt Stephanie. Which they immediately replied, "Aunt Stephanie made this for us?!!!" They were so excited, lol.

Anyway, I think next time I will double the recipe...I love corn tortilla food leftovers and they ate so well I don't have any!

I've made this before. It IS very yummy. I think it is fun you changed your look. I've been feeling the need for a new look, too. I guess it is related to the change in the seasons...
